For the sauce:
- About ½ cup of mayo. I use the avocado oil kind – no soy or canola based
- ¼ cup ketchup
- 3-4 sandwich pickles, chopped. I like mine heavily pickled
- Season to taste with salt, pepper, onion powder, paprika
- I also added some finely chopped onion, but not necessary
For the burger:
- Hawaiian pull apart rolls, cut in half
- Cheddar cheese
- 1 pound of ground beef. I’m using 85/15 grass fed, but grass finished is always preferred
- 2 heaping TBS mustard. I’m using Trader Joe’s garlic aioli mustard
- Chopped pickles
- Chopped sweet white onion, like a Vidalia
For the buns:
- About ¼ cup fresh grated gruyere or parmesan cheese. I’m using a raw milk Gruyere here
- 1 glove garlic, minced and crushed
- 1 TBS parsley, finely chopped
- Olive Oil
- Sesame seeds
Preheat your oven to 375
In a skillet, cook your ground beef with salt, pepper and mustard. Drain of any liquid, if needed.
On a sheet pan lined with wax or parchment, put the bottom part of the bread down and add cheese to cover. Then add ground beef, sauce, pickles, onions and top with more cheese. Top off with the buns and brush on the olive oil and cheese mixture. Cover with tin foil and bake for about 15 minutes. If the cheese is not melted you can uncover and bake 5-10 minutes longer, but try not to burn the buns.
