Creamy Arugula and Walnut Pesto Pasta with Burrata and Bacon

I love a good creamy pasta with pesto and since I always have arugula and walnuts on hand I decided I should make a fancy little dinner that’s actually very quick and easy to make. This dish comes together in under 30 minutes, and it’s perfect for busy weeknights. The peppery arugula, nutty walnuts, and salty bacon create a complex and satisfying taste.
For the pesto:
- 2 handfuls of arugula
- 1 cup parsley
- 2 garlic cloves
- 1 cup walnuts
- ¼ cup olive oil
- Splash of water
- Salt and pepper to taste
- Squeeze of lemon juice
Blend in a food processor and add a little more olive oil and water if too dry.
Trofie pasta, or any pasta of your choosing
Fresh burrata cheese
Pasta water
For garnish:
Crispy bacon or pancetta
Soffritto – optional, but highly recommended. From Trader Joe’s
Squeeze of fresh lemon juice
Salt and pepper to taste
Cook pasta to al dente. Fold in pesto with pasta water until saucy. Fold in burrata. Serve immediately with a little fresh lemon juice, soffritto, and crispy bacon.
